This is our third year releasing Valentina, and it’s easily the best it has tasted. Named after the daughter of a Guatemalan farmer, the coffee is grown by Enrique López at his farm, Finca Chelín — an experimental Pacamara cross with roots in Guatemala.

this coffee's story

This coffee is named after Valentina, the daughter of a Guatemalan farmer where the rare seeds of this varietal first originated. Those seeds later made their way to Enrique López at Finca Chelín — a farm that has always had women at its heart. Finca Chelín is named after Enrique’s mother, Graciela (“Chelín”), and inspired by the legacy of his grandmother, Ángel Peralta Rodríguez. Cultivating this varietal was no small task, requiring years of care, experimentation, and patience before the first successful harvest in 2019.This marks our third time working with Enrique, and the first of many coffees we’re excited to release from Finca Chelín throughout the year.

Black Honey for Enrique refers to the longer rest in cherry before depulping, not extra mucilage. This extended rest develops riper fruit sweetness and added complexity, while the coffee is then dried under sun and shade for balance and clarity — giving a cup that’s clean yet expressive.
