Named after the daughter of a Guatemalan farmer, this is a rare coffee cultivated by Enrique López at his farm Finca Chelín—an experimental cross between Pacamara and another Arabica variety originally found in Guatemala.

This coffee is named after Valentina—daughter of the farmer in Guatemala where the rare seeds of this varietal originated. Those seeds made their way to Enrique López in Mexico at Finca Chelín—a farm that has always had women at its heart. 

Finca Chelín is named after Enrique’s mother, Graciela, nicknamed “Chelín”, and inspired by the legacy of his grandmother, Ángel Peralta Rodríguez. We love the care and attention that went in to cultivating this varietal, a challenge that required years of dedication before the first successful harvest in 2019. 

The cherries undergo a meticulous triple fermentation process known as honey despulpado, which enhances malic acidity and brings out extraordinary flavours.
