Java was brought to the island of Java from Ethiopia by the Dutch in the early 19th century. Initially believed to be a Typica variety, it turned out to be an Ethiopian Landrace called Abyssinia. Java coffee has a higher resistance to coffee leaf rust and coffee berry disease compared to other arabica varieties.

The coffee cherries are picked and an oxidation process of 12 hours is carried out with the addition of must and a constant rotary movement to enhance flavour development. This is followed by 48 hours of anaerobic fermentation in specialised tanks. Afterwards, the cherries experience 24 hours of oxidation during the pulping process, coupled with a thermal shock treatment. The drying phase lasts for about 12 to 15 days, varying according to the weather conditions. Finally, the coffee beans are allowed to stabilise for a minimum of three weeks to ensure quality and consistency.

Situated in Acevedo Huila, Las Flores is a coffee farm lies at the base of the South ranges of the Andes in the Huila region of Colombia. This area is renowned for its fertile soil, making it one of the prime locations for coffee cultivation in the country. The combination of warm southerly winds from the Amazon and refreshing sea breezes from the Caribbean contributes to a unique sweetness in the coffee produced here. The cherries from Huila are distinctively characterized by a bright acidity, setting them apart from other Colombian coffees.


Established by Johan's parents in 1990, Johan took charge of Las Flores at the age of 24. Making a bold decision to diversify, he introduced a variety of specialty coffee crops, adding a unique touch to the farm's offerings.
