Parainema

Parainema is a rust-resistant hybrid was developed in Honduras by IHCAFE, though similar genetic selections have also been identified in Brazil and Guatemala. Bred for resilience, it rarely stands out in the cup - yet in the hands of Enrique at Finca Chelín, this Parainema, with Guatemalan genetics, becomes something exceptional.

For this lot, Enrique uses his Black Hydro Honey process: cherries are harvested very ripe, rested before depulping, then fermented, washed, and slowly dried under sun and shade to build sweetness, clarity, and structure.
