Iván and Jennifer Sebay are a producer couple based in El Pital, southern Huila. Together, they established their farm with a focus on growing distinctive varietals suited to the area’s climate, prioritising quality and long-term sustainability.
With support from a neighbour and a local quality analyst, 23-year-old Iván planted three varietals across 3.5 hectares of fallow land. Their work is grounded in collaboration, with each
other and the wider community, sharing knowledge, labour, and resources as the farm goes from strength to strength.
This washed Pink Bourbon represents the fruits of their labour. Careful fermentation and extended drying result in a coffee that is floral, sweet, and precise. The finish is clean and refined, speaking to the origin and partnership behind it.
