Wilder Lasso - Red Bourbon - 250g
Wilder Lasso is relatively new to the coffee scene. He is a veterinarian by trade but returned to his farming roots in 2017 when his father needed help on the farm. His family has strong coffee-growing roots which gave Wilder the knowledge to dive straight into specialty coffee growing. Wilder excelled in coffee production and began a varietal program that now includes more than 12 different varieties.
This coffee was grown by Wilder at his farm El Mirador in San Adolfo, Huila. The coffee was harvested following strict ripeness criteria, floated, and hand-sorted to remove any defects.
The micro-lot is 100% Red Bourbon. Bourbon is a natural mutation of Typica originally found on Reunion Island (which prior to the French revolution was called Bourbon Island )
This Red Bourbon was exposed to a dry aerobic fermentation of 24 hours and then placed inside Grainpro bags for 50 hours maintaining a temperature below 22ºC. Finally, the coffee was pulped, gently washed, and placed on raised beds until ideal moisture content was achieved.
