Norbey inherited La Esmeralda from his father nearly 30 years ago and initially made a good living producing commodity coffee. After the coffee price crisis of the early 2000s, Norbey became aware of the volatility of the coffee market and set about researching the specialty sector to stabilise and increase his income. During this time, he discovered exotic varietals, which require more care but could fetch much higher prices due to their exceptional quality potential.
This coffee, grown by Norbey at La Esmeralda was carefully hand-picked to select only the ripest cherries. Later, the cherries were fermented for 40 hours in an anaerobic environment. The cherries were then pulped, gently washed, and sundried until ideal moisture content was achieved.
The micro lot is 100% Tabi which is a new variety developed by Federacion Nacional de Cafeteros as part of Colombia’s efforts to combat leaf rust. The unique variety displays the same positive cup qualities as its parents - a cross between the Timor Hybrid, Bourbon, and Typica coffee tree.
