This coffee was grown by Johan Vergara at his family’s farm Las Flores in the small village of San Isidro in Pitalito, Huila. Johan comes from a coffee-producing family who began planting coffee in 1990. The family started with 18,000 coffee trees and continued to expand until they reached 90,000 trees. A turning point for Finca Las Flores was when they participated in the Cup of Excellence in 2006. The CoE program launched their journey into the world of specialty and differentiated coffees. Johan now manages the farm with the help of his family and has planted exotics like Sidra, Tabi, Wush-Wush and Pink Bourbon and this Caturra.
This microlot is 100% Caturra, a variety that originated in Minas Gerais, Brazil. It is a natural mutation of Red Bourbon. Caturra produces more coffee and is more resistant to plant diseases than Bourbon.
This coffee was harvested following strict ripeness criteria, floated and hand sorted to remove any defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and dried in temperature controlled conditions until ideal moisture content was achieved.
