Javier Rubio is a producer from the municipality of Gaitania, Tolima where his family has grown coffee for as long as he can remember. At the tender age of 15, Javier began working in the fields and about 10 years ago, he bought his farm, El Líbano. It was here he began growing Caturra coffee trees while also experimenting with exotic varieties such as Yellow Bourbon and San Bernardo.
This coffee was grown by Javier at El Líbano and is 100% Caturra. The Caturra variety originated in Minas Gerais, Brazil, and is a natural mutation of red Bourbon. Caturra produces more coffee and is more resistant to plant diseases than Red Bourbon.
The coffee was harvested following strict ripeness criteria, floated, and hand-sorted to remove defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed away, and the beans dried in temperature-controlled conditions until ideal moisture content was achieved.
