Felipe Arcila and his brother Carlos recently purchased Jardines Del Eden coffee farm. Growing coffee has been part of their family’s heritage for generations with both brothers having fond memories of riding through coffee fields with their father and
Jardins Del Eden specialises in exclusive coffee varieties including Gesha, Sidra, Pink Bourbon and Castillo. They also cultivate a range of exotic fruits such as bananas, plantain, and mandarin oranges on the farm ensuring they are kept busy throughout the seasons. This Pink Bourbon micro-lot was produced by Felipe using honey and tartaric acid process. The cherries undergo a careful selection process and are exposed to dry anaerobic fermentation for 72 hours. Mint leaves and tartaric acid are added as the fermentation takes place. The cherries are then pulped and left to dry on raised beds until the ideal moisture content is reached. The coffee cups with sweet, minty freshness - perfect for the holiday season.
As delicious as this coffee is as a warm brew, we recommend trying it as an iced coffee with a garnish of mint on a sunny summer's day.
Iced Coffee Recipe using V60
- Start by grinding 15g of coffee slightly finer that my usual pour overs, as a reference 16 click on Comandante.
- Add approx. 75grams of ice into the server.
- Bloom for 30 seconds adding 30 grams of water, don’t stir or spin
- On the second pour add 60g of water.
- On 1:00 minute mark add the rest of 60g of water, and slightly spin the brewer.
We find this the perfect summer brew with cup notes of mint, sugar cane and creamy body.
