Working directly with our Brazilian coffee partners Nathalia and Jose Maria for the last three years allowed us to bend the rules, and ask for a special fermentation this Christmas. Niko had a pre-existing love for Joses' Yellow Topazio after roasting the coffee first hand two years ago in Bell Lane. 
The process used was a hybrid honey process after depulping Jose and his team added cinnamon to the fermentation tanks. Unlike last year's Christmas coffee which highlighted the cinnamon flavour, instead, this year we focused on full flavours and paid particular attention to highlighting the sweetness.
The final cup profile is a delicious balance of hazelnut, honey, brown sugar with just a hint of cinnamon.  It's all about the sweetness this Christmas. 

Jose Maria De Oliveiria farms range from 1000 - 1280 meters above sea level and are in the only city in Brazil where the Atlantic Forest converges precisely with the Cerrado Mineiro region. Combining both biomes provide an ideal combination of precipitation and acidity to the Cerrado Mineiro soil, giving Jose’s coffees consistent uniqueness and versatility due to regional micro-climates.  This Yellow Topazio from Fazenda Mirante is grown at 1200 meters and is one of the highest in elevation of Jose Maria farms.

The coffees produced on Jose’s farms are Rainforest Alliance Certified, UTZ Certified, guaranteeing sustainable practices and social and economic benefits to the region of Cerrado Mineiro.

This is coffee is a real cracker the roast is suitable for both espresso and filter brewing methods.
