Colombia - Luz Helena Salazar 250g

This is the first lot from Luz Helena Salazar to be purchased by Bell Lane, however, we are no stranger to Luz and her family of producers having both had, and currently have coffee lots on offer from her sons Carlos and Felipe Arcila as well as her husband Jairo Arcila. Her coffee farming family mostly work together but they also like to focus individual projects, experimenting with exotic micro-lots and processing methods.

Grown at the family’s Maracay farm, this Castillo was exposed to a dry anaerobic fermentation for 48 hours. During the fermentation, de-hydrated mandarin skin was added to the anaerobic environment. The coffee was then washed gently and placed on raised beds with more de-hydrated mandarin skin. Temperatures are kept below 35 degrees while drying until the correct moisture content is achieved.

The results are outstanding and an overload of well-structured and balanced flavours from Tangerine, Mandarin, and Tropical fruits with lovely sugar cane sweetness to finish.


V60 Recipe

  • For this recipe, we used 30g of coffee ground on 20 clicks on Comandante.
  • Start by adding the coffee to the brewer.
  • Pour 90 grams of water don’t spin or stir and allow for 60 seconds to bloom. 
  • After 60 seconds start pouring the water in a controlled manner until reaching a total of 500g.
  • Brewed correctly this coffee should be very crisp and vibrant with notes of mandarin, apricot, sugar cane or more likely Lucozade.
